The Scandilicious Signe Johansen to host Scandinavian Afternoon Tea

Queen of Nordic cooking, Signe Johansen, is set to descend on The Magdalen Chapter in Exeter to treat guests to a one-off Scandinavian afternoon tea.

The Scandilicious food writer and chef is one of the UK’s top experts on Scandinavian food with her books Secrets of Scandinavian Cooking, Scandilicious and Scandilicious Baking all proving best- sellers.

Signe will be joining The Magdalen Chapter’s Head Chef Ben Bulger on Saturday 14 June to host The Chapter’s Scandinavian Afternoon Tea Party.

On the menu will be savoury delights including Gravadlaks (dill cured salmon) on Peter’s Yard Sourdough Crisp Bread with Crème Fraîche and Pickled Cucumber alongside a Goat’s Cheese on Rye with Vanilla Acacia Honey, Radish, Chives and Smoked Sea Salt. Sweet fancies will include Spelt Cinnamon Buns, Toscacake (Swedish vanilla sponge topped with salted caramel and almonds), Toasted Oat, Date and Coconut Cookies and a gluten free Raspberry, Lemon & Almond Torte.

Signe said: “People think of Scandinavian cooking and think Danish pastries and rye bread. Unlike the French, we Scandinavians have been very lax about promoting our baking. If someone is familiar with Scandinavian baking, it’s either because they’ve been there or have a family connection. However I believe our baking is just as good as French baking, if not better, so we have a lot to shout about.

“Afternoon tea is one of my favourite meals of the day! Cinnamon buns, cherry and pistachio pavlova, which is really pretty with edible flowers, lemon nutmeg madeleines, brownies and probably some mini-open gravadlax sandwiches on rye bread are all favourites of mine served up alongside a great cuppa. Norwegian afternoon tea is a really exciting affair and I can’t wait to share it with food lovers in Devon.

The Magdalen Chapter’s Scandinavian Afternoon Tea Party with Signe Johansen will start at 3.30pm. Guests will be able to enjoy a full Nordic afternoon tea plus listen to a short talk by the Scandilicious food writer. The event will finish with cocktails served in The Lounge.
