Tim Harris tempts us with some Apple Day pancakes

In my article about the Apple Day event at Quicke's the other day I mentioned the apple pancakes I made, but of course kept you all in suspense about how to make them. So now here is the recipe.

2 eggs 400 ml milk 250 g plain flour 1 tablespoon vegetable oil, plus more for cooking 2 teaspoons baking powder A pinch of salt 2 tablespoons caster sugar 2 teaspoons ground cinnamon or allspice 3 medium sized cooking apples, peeled, cored and grated  Icing sugar, maple syrup, golden syrup or whatever you'd like on your pancakes   Mix all the ingredients, except the apples, to a batter the consistency of creamy yoghurt. Stir in the grated apples and ensure you don't get clumps of apple sticking together. It may go a browny colour from the spices or from the fact that the apples may have gone a little brown after being peeled and grated. Don't worry! Heat a frying pan, and pour into it a little vegetable oil. Carefully wipe the oil around the pan with some kitchen paper to coat the whole surface. When hot put a spoonful of the batter into the pan and flatten it a little with the back of the spoon to help it cook evenly. Cook until holes begin to appear on the surface and you can turn it over, about 2 minutes. Then turn it and cook for another 2 to 3 minutes. Remove and sprinkle with icing sugar and/or whatever ever else you like on your pancakes.
